Square by design, light by craft — and deliberately uneven. The symbol of the house is a screw press, which is not a machine so much as an extension of a pair of hands: someone kneads, feels, weighs, turns, presses. Every cracker comes out of an action that is precise, repeated, almost a ritual. No two pieces are identical, and that is the point.
The wheat grows under the Mediterranean sun and is cut when it is ripe, not before. After that the list is short: selected flours, clean water, extra virgin olive oil, sea salt. Nothing else goes in. It takes very little to say a lot.
Baking is slow. Not as an affectation — as a method. Crispness arrives with time, never with haste, and the oven is kept closer to a bakery than to a factory. What comes out has the irregularity of bread made the old way: patience, heat and character.
Six lines, a range kept tight on purpose. Classic as the fixed point, grains and multigrain for the earthier end, then onion, turmeric and ginger, and corn. Equally at home on a cheese board and on a shelf, in 200 g packs from Bisceglie, Puglia.
